Cusine book recomendations (not recipes or cook books)?

I'm looking for a book on how to dine with certain dishes or beverages.

E.g. coffee can go with a certain dessert, a starter should have a glass of wine A, what are dessert wines, etc.

Too many books out there focus on recipes rather than the dining side of things. Are there any books out there that can refer to the dining culture of things (prefably European and Oriental dining habits)?

Provide a link to the relevant book shop (and prefably to the releant book) please.

I am slowly working my way through Larousse Gastronomique, a hefty but brilliant book. Only problem with it is that I can't buy (in UK) some of the ingredients. They tie in wines with particular dishes, which is good. Also, they have simple foods, not just complicated, extravagant ones. You can skip the stuff you have no chance of making.

For English cooking, you cannot beat Nigel Slater. All the other celebrity chefs are a pain in the backside.
