uh... you don't get much more basic than gumbo. i have never even HEARD of some of the things you mentioned. HOWEVER, I have found that recipe websites have come a long way in the past few years, and I have found some fantastic recipes there! Try meals.com, or allrecipes.com, or foodnetwork.com...

I have so many cajun cook books that it would take too long to mention all of them and most of them are very old, I really think your best bet would be to go to www.louisiana.com and find an area where you could order their cook books on line. There is a good one called ';Who's your mama, are you Catholic, can you cook...'; I think you would enjoy that one. Also you could go to www.foodnetwork.com and buy Emeril's cook books, they are real good.
The first couple of cookbooks from Emeril has the basics like jambalaya, etouffee, rice dressing (we call it dirty rice) in it. I haven't seen a book with boudin in it, but if you email me....we make it all the time and I can tell you.
The fricassee is just like stewed chicken or chicken stew, but if you don't know I can email you that too.
There are books called ';Talk About Good'; and '; River Road Cookbooks'; (I think they have 3), that you may be able to order online. Those are really authentic because alot of other people try to commercialize/interpret what they think Cajun food is, and that is not how we eat food down here sometimes.
I used to have a good cajun/creole recipe book called ';Jambalaya'; that had good, non-strange recipes...
