Making a Cook book for mom - Need Recipes?

I am putting a cook book together for my mom and I need a few more recipes in the following categories:

Sweet Potato Bread





1- 1/4 cups sugar


1/2 cup oil


2 eggs


1/2 tsp salt


1/3 cup water


1/2 cup chopped pecans


1-1/3 cups flour- plain or self rising


1 tsp cinnamon


1 tsp baking soda


1 cup sweet potato- cooked and mashed





Combine sugar, oil, eggs and water. Beat at medium speed until mixed. Combine flour, cinnamon, baking soda and salt. Add this to the egg mixture, mixing just until moistened. Stir in potatoes and pecans. Spoon into a greased and floured loaf pan. Bake at 350* for an hour or until toothpick inserted comes out clean. ** When using self rising flour, omit soda and salt..

Side Dish


Haricot Vert Almondine





1 1/2 lb. Haricot vert (long green beans)


1 tbsp. butter


1 tbsp. olive oil


1/ 2 cup slivered almonds


salt and pepper





In a sautee pan melt the butter and olive oil. Then add your cleaned haricot vert seasoned with salt and pepper and sautee for about 4 - 5 minutes. Just until they become bright green. In another sautee pan toast your almonds on a medium heat until they become a golden brown. Pour on top on the green beans. Healthy, light and great textures.





Appetizer - No Real Name





1 English Cucumber


1 Container of Alouette or any herbed cheese


1/4 lb. thinly sliced smoked salmon (lox)





Slice the cukes on a bias. Spread on the cheese and top with a small piece of the lox. If you like garnish each with a small snip of chive. Low cal, carb and looks really fancy on any color plate.





Dip


Roasted Onion Dip





3 Red Onions


1 cup of mayo


1 cup of sour cream


salt and peper


olive oil





Thickly slice the onions and place on a cookie sheet after separating the rings. Brush on some olive oil and salt and pepper. Bake at 400 for 25 minutes, or until the onions slightly char. Put the onions in a food processer and begin to blend, then add your sour cream and mayo gradually. You might need to add a little extra mayo or sour cream depending on the size of the onions.
