I'm a Culinary Student and the book we use is Professional Cooking by Wayne Gisslen. It give you methods, history and recipes. How to Cook, Book? not recipe's but techniques?
being a professional cooking student i also find Martha Stewart's cooking school ';lessons and recipes for the home cook'; a good series of books also...they can be found at local libraries and local good will stores and other thrift shops have great cook books too i have found many great dirt cheap books there as well as rummage sales in the spring and summer time.. hope this helps..and good luck to you ..happy holidays.
Hallelujah! A man that wants to learn how to cook! There are several demonstrations on the web also. Just type in ';how to cook pasta'; for example and you will find some good ones. I have learned alot by watching the shows on The Food Network also. I know they go kind of fast, but you can pick up some things. Good luck!
The Betty Crocker cook book called ';Everything you need to know to cook'; has alot of techniques at the beginning of it. It's been really helpful to me over the years. The recipes in it our good too.

books are helpful, but i would suggest searching videos online, maybe even YOUTUBE.COM

because actually seeing someone Saute or Sift something is a lot easier to learn than reading how to do it
